Fish in black bean sauce





Ingredients
2 slices of Spanish Mackerel
1 big onion ( cut into slices )
1 tomato ( cut lenthwise into 6 pieces )
1 stalk spring onion ( cut into 1" length each )
4 slices old ginger ( cut into thin strips )
1/2 tsp black bean sauce
1 tbsp dark soya sauce
1 tbsp sugar
1 tbsp black vinegar
1 tbsp light soya sauce
some oil

Preparation
1. Rub a bit of salt on the fish.
2. Heat up some oil in saucepan to shallow fry the fish.
3. Dish up when it  is cooked /or turns light brown.
4. Remove excess oil and leave about 2 tbsp oil in the saucepan.



5. Stir fry the ginger until fragrant. Add in the big onion , tomato and half of the spring onion ( the top section ).
6. Add 150ml water, oyster sauce, vinegar, light soya sauce, dark soya sauce, black bean sauce and sugar. Stir well and wait for the water to boil.




7. When the water is boiling, put in the fish . Cover to simmer to about 10 minutes.
8. Turn the fish . Cover and simmer for a further 5 minutes.
9. Put in the remainder spring onions.
10. Dish up to serve while hot.
