Lemon Chicken ( 柠檬鸡 )



Ingredients
250g boneless chicken breast
1 lemon
1/2 tsp salt
1 tbsp oyster sauce
1 tbsp white vinegar
3 tbsp rice flour

Gravy
2 tbsp lemon juice
1 tbsp sugar
1 tbsp corn flour
1 tsp light soya sauce
50ml water

Preparation
1. Rub 1/2 tsp salt , oyster sauce and vinegar on the chicken breast.
2. Leave it to marinate in the refrigerator for 4 hours.
3. When it is seasoned and ready for cooking, dust the chicken breast with 3 tbsp rice flour .







4. Heat enough oil in saucepan to shallow fry the chicken.
5. Put in the chicken when the oil is hot and fry until it turns golden brown on both sides.





6. Remove the chicken and put it on a piece of kitchen tissue to absorb the oil.








7. Cut the chicken into thick slices and put on a serving plate.









8. Put the ingredients for the gravy in a bowl and mix well.
9. Pour the gravy into the saucepan and cook over low fire. Stir until the gravy thickens and boils.
10. Pour the lemon gravy onto the chicken just before serving.
