Sambal Chilli Potato with Chicken




Ingredients
250g lean meat, cut into thin slices
medium size potatoes, cut into slices
shallots, cut into slices
2 tbsp corn flour
tbsp light soya sauce
1 tbsp oyster sauce
1 1/2 tbsp sambal chili paste

Preparation
1. Marinate chicken with corn flour and light soya sauce.
2. Heat oil in saucepan. Deep-fry the sliced potatoes until cooked . Dish out the cooked potatoes and pour out the excess oil, leaving 1 tbsp oil in the saucepan.
3. Put the shallots into the saucepan and sauté until fragrant. Add in the chicken and stir-fry to cook.
4. Put in the potatoes, sambal chilli paste, oyster sauce and light soya sauce. Stir fry the potatoes and chicken with samba chilli until well mixed. Cover the saucepan and simmer for 3 minutes.
5. Dish up and serve .

Chicken curry without coconut milk



Ingredients
2 pcs chicken thigh ( cut into big pieces )
3 potatoes ( each cut into 6 pcs )
4 shallots ( cut into slices )
125 ml plain yogurt
1 tbsp oyster sauce
1/2 tsp salt
1/2 tsp sugar
2 tbsp light soya sauce
3 tbsp curry powder
1 tbsp chilli powder
600 ml water
some oil

Preparation
1. Deep fry the potatoes until golden brown.
2. Dish up the potatoes leaving about 3 tbsp oil in the saucepan.
3. Stir-fry the shallots until fragrant.
4. Put in the chicken and stir-fry.
5. Add in the oyster sauce, soya sauce, salt, sugar, curry powder and chilli powder.
6. Stir-fry until well-mixed.


7. Add in the potatoes and 600ml water.
8. Cover the curry to simmer for 25 minutes.
9. Lower the flame and add in the yogurt. Stir to mix well. Leave it to cook for 3 minutes.
10. Dish up to serve.

Home-style diced potato with minced pork




Ingredients
150g minced meat
2 potato ( about 150g )
150g green peas
1 big onion ( cut into slices )
2 tbsp light soya sauce
2 tbsp corn flour ( for the minced meat )
1 tbsp corn flour ( to make corn starch )
1 tbsp oyster sauce
1 tbsp dark soya sauce
pinch of salt
some oil

Preparation
1. Put 2 tbsp light soya sauce and 2 tbsp corn flour to the minced meat and mix well to season.
2. Cut the potato into small cubes. Deep fry the potato cubes for about 5 minutes.
3. Dish up the potatoes . Remove the oil and leave about 2 tbsp oil in the saucepan.



4. Put the sliced big onion in the saucepan and stir fry.








5. Put in the minced meat to stir-fry together until cooked.








6. Add the potatoes, green peas, oyster sauce, salt , dark soya sauce and 100ml water . Stir to mix evenly.
7. Cover to cook for about 7 minutes.







8. Mixed 1 tbsp corn flour with 2 tbsp water to make cornstarch paste.
9. Pour the cornstarch onto the potato and stir well when doing so and wait for it to boil.
10. Dish up to serve.

Spicy fried chicken in sweet chilli sauce



Ingredients
2 pcs chicken thigh ( cut into pieces )
2 potatoes
1 tomato
2 shallots (cut into slices )
3 cloves garlic
5 slices ginger
1 fresh chilli
1 tbsp white vinegar
1 tbsp sugar
1 tbsp oyster sauce
2 tbsp light soya sauce
1/2 tsp salt
some oil
100 ml water

Preparation
1. Season the chicken with salt and soya sauce for 20 minutes.
2. Pound ginger,garlic and chilli together.
3. Deep fry potatoes till cooked. Dish out and leave 2 tbsp oil in saucepan.
4. Fry the shallots till fragrant. Add in chicken and stir fry evenly.
5. Put in potatoes, tomato, oyster sauce, pounded chilli ,vinegar ,sugar and water. Stir-fry lightly.
6. Cover to simmer over low fire for 20 minutes till cooked.
7. Dish up to serve.

Sweet and sour pork with potato

Ingredients
250g lean meat, cut into thin slices
3 medium size potatoes, cut into slices
2 shallots, cut into slices
2 tbsp corn flour
1 tbsp light soya sauce
1 tbsp tomato sauce
6 tbsp chilli sauce
1 tbsp oyster sauce
3 tbsp water


Preparation
1. Put the corn flour, light soya sauce and sliced lean meat into a bowl and mix well.
2. Deep-fry in hot oil the sliced potatoes until cooked . Dish out the cooked potatoes and pour out the excess oil, leaving 1 tbsp oil in the saucepan.
3. Put the shallots into the saucepan and stir-fry until fragrant. Add in the seasoned meat. Stir-fry to cook the meat.
4. Put in the potatoes, chilli sauce, tomato sauce, oyster sauce and water . Stir the potatoes and meat in the sweet sour sauce until well mixed. Cover the saucepan and cook over low fire for 3 minutes.
5. Dish up and serve .
