Stir-fry sweet sour chicken fillet



Ingredients
200g chicken fillet ( cut into pieces -medium size )
1 tomato ( cut into 6 pieces)
1/2 green capsicum ( cut into pieces)
1/2 cucumber ( cut into pieces without seed )
1 big onion (cut into slices )
1 fresh chilli ( cut into slices)
1 tbsp oyster sauce
4 tbsp flour ( for dusting chicken fillet )
2 tbsp light soya sauce
2 tbsp sugar
2 tbsp white vinegar or apple vinegar
5 tbsp chilli sauce
2 shallots ( cut into slices )
pinch of salt
Some oil

Preparation
1. Put cucumber, big onion, chilli, sugar and vinegar into a bowl and mix well. Leave aside to season.
2. Season chicken fillet with soya sauce .
3. Put the flour on a plate and dust the chicken fillet.
4. Heat enough oil in saucepan for deep frying . Deep fry the chicken fillet coated with flour until golden brown.
5. Dish out the chicken and leave 1 tbsp oil in saucepan. Fry the shallot until fragrant.

6. Add in all the ingredients , oyster sauce ,salt and chilli sauce.Stir fry evenly for 5 minutes
7. Dish out and serve while hot.

    Today I made this, but without cucumber and capsicum since I don't have any.. and I use short cut, we have sweet/thai chilli sauce at home, so straight away use that instead.

    XD

    But still quite nice.

  2. Good try. In fact vinegar ,sugar and chilli are part of the ingredients in Thai chilli sauce. Hope you can find further short cuts for the rest of the recipes too. Remember to let me know.
