Rendang Chicken



Ingredients
1 kg chicken thigh ( cut into big pieces )
4 shallots ( cut into slices )
2 tbsp oyster sauce
1/2 tsp salt
1/2 tsp sugar
2 tbsp light soya sauce
1 tbsp chilli powder ( optional )
2 tbsp curry powder
some oil

Ingredients to be pounded :
8 fresh chilli
3 cm lengkuas
1 cm turmeric
6 shallots
1 stalk lemon grass




Preparation
1. Marinate the chicken with salt, sugar and light soya sauce for 30 minutes.
2. Heat up 6 tbsp oil in saucepan and stir-fry shallots until fragrant. Add in the chicken , pounded ingredients, oyster sauce and curry powder.
3. Stir-fry to mix the ingredients evenly.



4. Cover and simmer over low fire for 30 minutes. Stir the chicken from time to time.
5. Taste to see if you would prefer to add a bit of the chilli powder to make it more spicy. ( I added 1 tbsp spoon this time ) Stir in the chilli powder and cook for further 5 minutes.




6. When the chicken is cooked , dish out the chicken with the thick gravy of pounded ingredients.
7. Serve with white rice.
