Fried eggs with prawn in oyster sauce





Ingredients
150g prawn ( shelled and deveined)
2 eggs
1 shallot ( sliced)
1 tbsp oyster sauce
1 tsp light soya sauce
1 stalk spring onion ( cut into small pieces)
pinch of salt 
dash of pepper
some oil 

Preparation
1. Beat the eggs in a bowl. Add in the prawn, light soya sauce, salt and pepper. Stir lightly to mix well.
2. Heat up 3 tbsp oil in the saucepan and stir fry the shallot until fragrant.
3. Swirl the saucepan so that it is evenly covered with oil. Pour the egg mixture into the saucepan.
4. When one side is done (slightly brown), turn it over to cook the other side.

5. Add 50ml water mixed with 1 tbsp oyster sauce into the saucepan, when both sides of the omelette are cooked (not too brown).
6. Cover to simmer for 1/2 minute over low flame.






7. Put in the spring onion and stir fry lightly.
8. Dish out to serve.

Prawn omelette




Ingredients
200g prawns (shelled and deveined)
10 small black cloud fungus (云耳, soaked and cut )
3 eggs ( beaten )
2 cloves of garlic (chopped finely)
1/2 tbsp oyster sauce
1 tbsp light soya sauce
pinch of salt 
dash of pepper
some oil 

Preparation
1. Heat up 2 tbsp oil in saucepan and stir fry garlic until fragrant. Add in the prawns and stir fry for a while.
2. Put in the black fungus, oyster sauce, light soya sauce, pinch of salt and stir fry for 3 minutes.




3. Add in 2 tbsp oil and pour in the beaten eggs. Add in dash of pepper. Swirl to spread the eggs evenly over the prawns and the black fungus.
4. When the eggs begin to dry up,  stir fry gently until the eggs are just cooked. Do not overcook the eggs as in this case we want the texture of the eggs to be soft.
5. Dish out and garnish with spring onion and chilli.

Egg roll with fish paste and seaweed




Ingredients
2 eggs
200g fish paste
1/4 green capsicum ( chopped into tiny pieces)
1 red chilli ( chopped into tiny pieces)
1 sheet dried seaweed/ nori sheet
1/4 tsp salt
1/2 tbsp oyster sauce
1 tsp light soya sauce
dash of pepper
some oil

Preparation
1. Add salt, oyster sauce and pepper to fish paste. Mix well and set aside.
2. Beat the eggs.  Add in pinch of salt and 1 tsp light soya sauce. Stir to mix well.
3. Heat up 3 tbsp oil in saucepan to cook the egg omelette.
4. When the omelette is about to cook, turn off the flame.


5. Put the dried seaweed sheet on the omelette, spread the fish paste evenly over the seaweed. Sprinkle the green capsicum and red chili on the fish paste.






6. Roll up the omelette and steam it for 15-20 minutes.
7. Cut into slices to serve.

"3 in 1" baked beans with pork and eggs




Ingredients
1 can baked beans
2-4 eggs 
100g pork fillet ( cut into thin slices )
1 shallot ( cut into thin slices )
1 tbsp oyster sauce
1 tbsp light soya sauce
1 tbsp cornflour
some oil

Preparation
1. Marinate the pork fillet with 1 tbsp light soya sauce and 1 tbsp cornflour. Set aside.
2. Heat up 2 tbsp oil in the saucepan and fry the eggs.
3. Dish the eggs onto a plate.




4. Add 1 tbsp oil to the saucepan and stir fry the shallot until fragrant.
5. Put in the pork fillet and stir fry till cooked.







6. Put in the baked beans and 1 tbsp oyster sauce. Stir fry to mix evenly.
7. Cover to cook for 3 minutes.






8. Pour the baked beans onto the plate which contains the eggs .
9. Serve hot with rice.

Eggs fried with tomato (蕃茄炒蛋)




Ingredients:
2 large eggs
1 tomato (cut into thin wedges)
50g Chinese chives ( cut into small pieces)
1 tsp oyster sauce
1 tsp light soya sauce
dash of pepper
1/4 teaspoon sesame oil
2 tablespoons cooking oil

Preparation
1.Beat the eggs lightly in a bowl together with sesame oil, pepper, oyster sauce and light soya sauce to blend well. Set aside.
2. Heat up 2 tbsp cooking oil in saucepan. Add the tomato wedges and pinch of salt. Stir fry lightly and then cover to cook for 2 minutes.




3. Add in the chinese chives and stir fry to mix well.








4. Add in the beaten eggs. Swirl the saucepan if necessary to spread the eggs. Leave for a while without stirring for the eggs to cook slightly.






5. Stir-fry the whole thing until the "egg portion" turns slightly golden brown.
6. Dish out to serve.

Home-style bitter gourd fried with eggs



Ingredients
250g bitter gourd
3 eggs
2 shallots ( sliced into thin pieces)
1 tbsp oyster sauce
1 tbsp light soya sauce
some salt
some oil

Preparation
1. Slice the bitter gourd lengthwise into 4 pieces and remove seeds and inner white pulp.
2. Cut the bitter gourd into thin slices. Rub the bitter gourd with salt (to remove bitterness). Leave for about 5 minutes and rinse with water to remove the salt.
3. Heat 3 tbsp oil in saucepan and stir-fry the shallots until fragrant.
4. Put in the bitter gourd. Add in 1 tbsp oyster sauce and stir-fry for a while. Cover to simmer over low heat for 7 minutes.

5. Beat the eggs lightly in a bowl. Add in 1 tbsp light soya sauce and mix well.
6. Pour the eggs over the bitter gourd.







7. Leave for a while without stirring for the eggs to cook slightly.








8. Stir fry the whole thing until the "egg portion" turns slightly golden brown.
9. Dish out to serve.

(You are surprised that the bitter gourd doesn't taste bitter at all.)

Omelette with leeks




Ingredients
3 eggs
50g leeks
1 tomato ( cut lengthwise to 10 pieces )
1 tbs oyster sauce
1 tsp light soya sauce
1/4 tsp salt
dash of pepper
some oil 

Preparation
1. Cut the leeks diagonally into thin slices.








2. Beat the eggs into the bowl containing the leeks.
3. Add oyster sauce, light soya sauce ,salt ,pepper and 1 tbsp oil to the egg mixture and mix well.







4. Heat up 4 tbsp oil in the saucepan. Swirl the saucepan to even out the oil.
5. Pour the egg mixture into the saucepan to cook for 3 minutes until the surface of omelette is dry.
6. Turn the omelette and fry until golden brown.
7. Dish out to serve with cut tomato.

Omelette with minced meat and chinese chives




Ingredients
3 eggs
50g minced pork
50g chinese chives ( cut into small pieces )
1  tbsp light soya sauce
1/2 tbsp oyster sauce
pinch of salt
dash of pepper
some oil

Preparation
1. Put 1 tbsp soya sauce to the minced pork and mix well.
2. Add 3 eggs to the chives and beat together.
3. Put in the minced pork, oyster sauce, salt and pepper and stir to mix evenly.
4. Heat up 3 tbsp oil in saucepan. Swirl the saucepan to spread the oil evenly.
5. Pour the mixture into the saucepan and cook for about 3 minutes.

6. Toss the omelet to cook the reverse side for a further 3 minutes.
7. The omelette is done when the colour turns golden brown.
8. Dish out to serve.

Braised pork with Egg




Ingredients
500g pork ( shoulder meat, cut into big pieces , 1"x1"x2")
12 boiled eggs
6 shallots ( sliced)
2 tsp salt
2 tbsp oyster sauce
4 tbsp dark soya sauce
2 tbsp light soya sauce
1/2 tsp sugar
700ml water
3 tbsp shao xing rice wine ( 绍兴酒)
6 tbsp oil

Preparation
1. Cut the meat into big pieces and season with light soya sauce. 2. Heat up 6 tbsp oil in saucepan. Fry the shallots until golden brown.
3. Put in the seasoned meat and stir fry until well mixed.





4. Add 700ml water , dark soya sauce, oyster sauce, wine, salt and sugar. Stir evenly.
5. Put in the hard boiled eggs . Cover the saucepan cook over high flame for 15 minutes.






6. Turn to low flame and cook for further 1 1/2 hours.
7. Turn the eggs from time to time and check that the gravy does not dry up .
8. Serve while hot.

Simple Otak-otak




Ingredients
200g Spanish Mackerel fillet ( cut into small pieces)
3 medium size eggs
1 1/2 tbsp tom yam paste
2 tbsp turmeric powder
1/2 tsp salt
1/2 tsp sugar
5 Kaffir lime leaves ( daun limau perut )
1 tsp corn flour
150ml thick coconut milk ( could be obtained in packet form )

Preparation
1. Mix tom yam paste, corn flour, salt and sugar in the coconut milk. Stir well to make sure that there are no lumps of tom yam paste or corn flour.
2. Add in the 3 beaten eggs , followed by the fish.
3. Stir well .
4. Put the lime leaves on surface of the mixture and steam over low fire for 20 minutes.




Steamed Egg with Pork



Ingredients
100g ground pork
2 eggs
2 shallots ( cut into slices )
1/2 tsp salt
1/2 tbsp oyster sauce
2 tbsp cooking oil
2 tbsp light soya sauce
2 tbsp corn flour
200ml warm water
dash of pepper

Preparation
1. Add corn flour and soya sauce to the ground pork and mix well.
2. Heat up 2 tbsp oil in saucepan and fry the shallots until fragrant. 
3. Put in the ground pork and stir-fry till cooked.
4. Dish out the cooked ground pork into a bowl. 




5. Add the 2 beaten eggs , salt, pepper and oyster sauce, followed by the 200ml warm water. Stir well.
6. Steam the mixture using low flame for 20 minutes.
( This is important so as to ensure the steamed egg  texture is soft and smooth )
