Pork meat ball in black sauce

Ingredients for meat ball
350g minced meat
2 tbsp corn flour
1/2 tbsp oyster sauce
1/2 tbsp light soya sauce
1 tbsp sesame oil
1/4 tsp salt
dash of pepper

Ingredients for the black sauce
2 shallots ( slice into thin pieces)
1 stalk spring onion ( cut into 2" lengths)
1 clove garlic ( flattened using back of knife)
1/2 tbsp oyster sauce
light soya sauce ( to taste)
dark soya sauce
some sugar ( to taste)
2 tbsp oil

Preparation
1. Put all the ingredients for making meat ball into a bowl and mix well.
2. Wet your hands first before making the meat balls as the minced meat is sticky and it's difficult to form the meat balls. Set aside the meat balls to prepare the black sauce.
3. Heat up 2 tbsp oil in saucepan and stir-fry the shallots until golden brown. Leave aside.
4. Boil 1 -2 cups of water in a small pot. Add all the ingredients for black sauce with the fragrant oil( fried shallots and oil).
5. Stir and taste the black sauce. Add more sugar, light soya sauce or dark soya sauce as required.
6. Put in the meat balls and cover to boil over medium flame for 15-20 minutes.
7. You may thicken the black sauce by adding 1 tsp cornflour dissolved in 4-5 tbsp water.
