Ingredients
2 medium size eggplant (sliced - 1/2" thick )
150g ground meat
1 tbsp oyster sauce
1 tbsp light soya sauce
2 tbsp corn flour
1/2 tsp hot soy bean paste
3 tbsp water
3 cloves garlic + 1/2 fresh red chili ( to be pounded)
some oil
1. Shallow fry the eggplant for 5 minutes ( almost cooked ). Dish out and leave 1 tbsp oil in saucepan.
2. Marinate ground meat with corn flour and light soya sauce.
3. Pound 1/2 red chili and garlic together.
4. Stir -fry ground meat till cooked.
5. Add oyster sauce, hot soy bean paste ground chilli/garlic and water to ground meat . Stir evenly.
6. Put in eggplant, stir-fry over medium heat till dry.
7. Dish out onto a plate and serve.
