Spicy Stir -fry Beef



Ingredients
200g  beef (thinly sliced)
1 small red capsicum
1 small green capsicum
1  slice pineapple ( cut into smaller pieces)
1 big onion ( sliced )
2 green chilli (sliced)
3 cloves of garlic (chopped)
2 shallots ( sliced)
4 slices young ginger
1 tbsp spicy black bean paste
1/2 tbsp oyster sauce
1/2 tbsp dark soya sauce
2 tbsp  light soya sauce 
some oil

Preparation
1. Marinate the beef 3 tbsp soya sauce and 2 tbsp corn flour.
2. Heat up about 2 tbsp oil in saucepan . Stir-fry chopped garlic, shallot and ginger till fragrant.
3. Put in the big onion and stir fry for a while, followed by beef and continue to stir fry till almost cooked.


5. Add in the green and red capsicum, pineapple, black bean paste, oyster sauce and dark soya sauce and 1 tbsp water . Stir-fry for about 5 minutes to cook and mix evenly.
6. Remove and serve.

Rendang rice dumpling




Ingredients :
500g glutinous rice
1 tbsp turmeric powder
1 tsp salt
1/2 tbsp lemon juice
1 tbsp light soya sauce
1 tbsp oyster sauce
3 tbsp oil
3 shallots (sliced thinly)
1 1/2 cup water ( or 1 cup water + 1/2 cup coconut milk)
500g rendang beef ( for fillings)
30 pcs bamboo leaves ( soaked, washed and drained dry)
some strings

Preparation
1.Wash and soak glutionous rice with turmeric powder, salt and lemon juice for 1 hour.






2. Heat 3 tbsp oil in saucepan and fry the shallots till fragrant.
3. Put in the glutionous rice, oyster sauce, light soya sauce and fry to mix well.






4. Add in 1 1/2 cup water and bring to boil. Stir constantly to make sure that the glutinous rice does not stick to bottom of the pot.








5. Cook over medium flame until the water is fully absorbed.







6. Set aside to cool.










7. Take 2 pcs of bamboo leaves (with rough surfaces facing each other) and fold into a cone shape.








8. Put in 2 tbsp rice, followed by the fillings and then top with another 2 tbsp rice. Wrap and tie the rice dumpling as follows:

































9. Put the dumplings in a big pot of boiling water (fully immersed). Cover to boil for 1 - 1 1/2 hours. Hang up the dumplings to drain dry.
10. Cool for about 5 minutes and serve.

Easy beef Rendang




Ingredients
1 kg beef ( cut into chunks or thick slices)
1 packet rendang curry paste
1 packet (200/250ml)coconut milk
3 shallots ( cut into thin slices)
4 tbsp oil
salt, sugar, soya sauce




Preparation
1. Heat oil in saucepan. Put in the shallots and stir-fry until fragrant. Add in the rendang curry paste and the beef. Stir fry to mix well.
2. Add in the coconut milk. Add in enough water to just cover the meat.
3. Bring to boil over medium flame and then cook with low flame for about 1 1/2 to 2 hours until the gravy thickens and the beef is tender.
4. Remember to stir with a spatula from time to time to prevent sticking and burning at the bottom part.
5. Add in more water if the gravy dries up too quickly before the beef is tender.
6. Add salt, sugar and soya sauce to taste ( varies with different suppliers of this rendang paste).
