Barley water with dried winter melon





Ingredients
1 packet (100g )barley
1/2 packet (100 g) dried winter melon
5 pandan leaves ( optional)






Preparation
1. Boil the barley and winter melon in a pot consists of 1.5 litre water.
2. Simmer for 30-45 minutes.
3. It can be served either hot or cold.

* Barley water is known to be good for "cooling". So drink more when you feel "heaty".






Fried Kembung fish (Mackerel) with sambal chilli





Ingredients
2 kembung fish
3 tbsp sambal chilli
some salt
some oil




Preparation
1. Clean the Kembung fish and rub some salt on it.
2. Heat enough oil in saucepan to shallow fry the fish.
3. Fry the fish over high flame until light golden brown. Turn the fish over to fry the other side.
4. Dish out the fish.
5. Spread the sambal chilli over the fish and serve with white rice.














Watercress and spare ribs soup (西洋菜排骨汤)




Ingredients
250g watercress
250g spare ribs
5 slices old ginger
1/2 tbsp salt
1 tbsp light soya sauce
dash of pepper


Prepartion
1. Boil 1.2 litre water in a pot.
2. When the water boils, add in the ginger, spare ribs and cover to boil for 5 minutes.
3. Add in the watercress and cook the soup over medium flame for 30-45 minutes.
4. Put in salt, light soya sauce and pepper to taste.
5. Serve hot.
